Aushak are tender dumplings filled with sautéed leeks or scallions, boiled and topped with spiced ground meat sauce, garlic yogurt, and a dusting of dried mint or red chili flakes. Unlike mantu (which are meat-filled), aushak highlights vegetables in the filling and meat in the topping. It’s especially popular in Kabul and central Afghanistan during Ramadan, Eid, or when entertaining guests.
