Despite the name, kōji-based amazake is non-alcoholic, while the sake kasu version may contain trace alcohol. Naturally sweet and mildly tangy, amazake has a thick, creamy texture and is often enjoyed warm in winter or chilled in summer, especially during festivals and New Year celebrations.
