Knafeh is a beloved Palestinian dessert made with shredded phyllo dough (kataifi) layered over soft white cheese—traditionally Nabulsi or Akkawi—then baked until golden and soaked in fragrant orange blossom– or rosewater–infused sugar syrup. Topped with crushed pistachios, it is crispy on the outside and gooey within. Knafeh Nabulsiyeh, from the city of Nablus, is the most iconic version and a point of national pride. Often enjoyed during Ramadan and special celebrations, it’s also sold fresh from bakeries across Palestine, served warm and sliced straight from the tray.
