Romesco is a traditional Catalan sauce made from roasted red peppers, tomatoes, toasted almonds or hazelnuts, garlic, olive oil, and vinegar, often thickened with stale bread. Smoky and tangy with a nutty base, it's blended into a smooth, rust-colored purée.
Originating in Tarragona, Catalonia, romesco was first created by fishermen to pair with grilled seafood, but is now commonly served with calçots (grilled green onions) during winter festivals, as well as with roasted vegetables, meats, and fish.
