The California Roll is a type of uramaki (inside-out sushi roll) made with crab or imitation crab (kanikama), avocado, and cucumber, rolled with nori (seaweed) on the inside and sushi rice on the outside, often finished with sesame seeds or tobiko (fish roe).

Invented in Los Angeles in the 1960s–70s by sushi chefs like Ichiro Mashita, the roll was designed to appeal to Western diners by hiding the seaweed and using familiar ingredients. It is credited with helping popularize sushi in North America, making raw fish less intimidating by offering a fully cooked, creamy, and crunchy alternative.

Unlike generic uramaki, which can be filled with anything, the California Roll is a specific, iconic version of uramaki that became the blueprint for many other American-style sushi rolls.
