Uramaki, or “inside-out roll,” is a type of maki sushi where the rice is on the outside and the seaweed (nori) wraps around the inner filling. Typically filled with combinations like crab, avocado, cucumber, tuna, or shrimp tempura, the roll is often coated in toasted sesame seeds or fish roe (masago or tobiko).
Uramaki was popularized in the United States—especially California—as a way to appeal to Western palates unfamiliar with seaweed. The California Roll, one of the most famous examples, helped spark the global sushi boom of the 1980s and 1990s.
